Cooked chickpeas
Description
Cooked chickpeas have a mild, slightly nutty flavor and a creamy, gently grainy texture; the grains are round, light beige, and retain their firmness after cooking, providing a pleasant contrast in dishes. They work well in smooth spreads like hummus, as well as in salads, curries, soups, or baked snacks, and also serve as a base for patties and fillings, adding substance and the natural sweetness of legumes. Nutritionally, cooked chickpeas are rich in plant protein, fiber, folic acid, iron, and minerals, while having a relatively low glycemic index, which promotes satiety, gut health, and cholesterol control. They should be stored in an airtight container in the refrigerator for up to 3–4 days; they can also be portioned and frozen for about 3 months, preferably after draining and with a little liquid to maintain texture after thawing.
