Liquid smoke is a clear or slightly amber concentrate of smoke flavor with an intense, pleasantly smoky, and slightly sweet aftertaste, which should be used sparingly to give dishes a smoky note without the use of fire. Nutritionally, it has negligible caloric value and almost no macronutrients; it does not provide significant vitamins or minerals, although condensed phenolic compounds may exhibit weak antioxidant properties.
