Description
Liquid smoke is a clear or slightly amber concentrate of smoke flavor with an intense, pleasantly smoky, and slightly sweet aftertaste, which should be used sparingly to give dishes a smoky note without the use of fire. Nutritionally, it has negligible caloric value and almost no macronutrients; it does not provide significant vitamins or minerals, although condensed phenolic compounds may exhibit weak antioxidant properties. For health reasons, it is advisable to use it in moderation, choosing products with declared low levels of contaminants produced during combustion. In the kitchen, liquid smoke pairs well with meats, fish, grilled vegetables, sauces, marinades, and vegan substitutes for "smoked" flavors, adding depth and aroma. Store tightly sealed in a cool, dark place; once opened, it is best kept in the refrigerator and used within a few months.
