Liquid smoke is a clear or slightly amber concentrate of smoke flavor with an intense, pleasantly smoky, and slightly sweet aftertaste, which should be used sparingly to give dishes a smoky note without the use of fire. Nutritionally, it has negligible caloric value and almost no macronutrients; it does not provide significant vitamins or minerals, although condensed phenolic compounds may exhibit weak antioxidant properties. For health reasons, it is advisable to use it in moderation, choosing products with declared low levels of contaminants produced during combustion.
