Sugar (for compote)
Description
Sugar (for compote) is usually white, finely granulated table sugar with a pure, sweet taste and a clear, crystalline structure that dissolves quickly in water, creating a clear syrup. Nutritionally, it is practically pure carbohydrate providing energy (about 4 kcal per gram) without vitamins, minerals, or fiber; in compotes, it serves as an energy additive and – at high concentrations – a preservative, so it is advisable to use it in moderation. In the kitchen, sugar for compote balances the acidity of fruits, enhances aroma, improves the color and texture of the syrup, pairs well with most fruits and spices such as cinnamon, cloves, or citrus zest, and is also used for making jams and syrups. It should be stored in an airtight container in a dry, cool place, away from odors and moisture, which prevents clumping and odor absorption.
