Description
Filling sugar is a fine-grained, most often white sugar with a pure, intensely sweet taste and a shiny, crystalline structure, easily dissolvable in moist mixtures. Nutritionally, it mainly provides quickly absorbable carbohydrates — about 4 kcal per gram — and contains no significant vitamins or minerals; it serves as a quick source of energy, but excessive consumption can contribute to tooth decay, weight gain, and metabolic disorders, so it is advisable to use it in moderation. In the kitchen, filling sugar is used to sweeten and thicken fruit fillings, jams, creams, and pudding fillings, facilitates the release of juice from fruits, supports gelling with pectin, and adds shine and a caramelization point. It should be stored in an airtight container in a dry, cool place, away from odors and moisture, which ensures long shelf life and prevents clumping.
