Description
Dark chocolate 70% has an intense, balanced flavor with a distinct, slightly bitter cocoa note and subtle sweetness, a dark, shiny color, and a characteristic smooth sheen and "snap" when broken. From a nutritional standpoint, it is calorie-dense and rich in fats, but contains more cocoa solids than milk chocolate, less sugar, a moderate amount of protein and fiber, and valuable minerals such as magnesium, iron, and copper; thanks to flavonoids, it has antioxidant properties and supports cardiovascular health when consumed in moderation. In the kitchen, 70% chocolate is perfect for baking, ganache, glazes, warm desserts, and melting, but also pairs well with bold combinations of fruits, nuts, cheeses, or spicy dishes.
