Description
Bread flour type 750 has a creamy-white color and a slightly grainy texture; during baking, it produces a crispy crust and elastic crumb with a pleasant, slightly nutty flavor characteristic of flours with a higher mineral content. It is richer in protein and gluten than flours type 450–550, which makes it work well during rising and gives baked goods structure. From a nutritional standpoint, it primarily serves as a source of energy-providing carbohydrates, delivers plant protein, fiber, and B vitamins, as well as minerals (including iron, magnesium) in amounts dependent on the degree of milling, which supports satiety and metabolic functions. It is useful for baking bread, rolls, yeast cakes, pizza, and artisanal baked goods, wherever a strong gluten network and good crumb structure are desired. Store in a dry, cool place in an airtight container, away from light and moisture; to extend freshness, it can be stored in the refrigerator or freezer.
