Apple (firm, sour, e.g. gray renet)
Description
A firm and sour apple, such as a gray renet, has a crisp, crunchy flesh with a light yellow color and a skin in shades of green with a reddish blush. The taste is distinctly tart, aromatic, and lingers in the mouth, making it a great balance for sweet additions. It is a low-calorie fruit rich in fiber (mainly pectin), vitamin C, potassium, and polyphenols with antioxidant properties; regular consumption supports digestion, a feeling of fullness, and may positively influence lipid profiles and glycemic control. In the kitchen, firm sour apples are perfect for baking and stewing, for pies, purees, jams, sauces for meats (especially pork), and for drying; they retain their shape and sharpness of flavor. Store them in a cool, dark place or in the refrigerator (0–4°C), in a perforated bag or fruit drawer, away from ethylene-sensitive vegetables, regularly removing damaged pieces.
