Ground cardamom
Description
Ground cardamom is an aromatic, fine powder with a greenish-brown hue and an intense, complex flavor that combines citrus, camphor, and slightly sweet notes, with a distinct, fresh aroma. As a spice, it has strong, warming properties and a slight bitterness, so it’s best to add it sparingly to avoid overpowering the dish. Nutritionally, cardamom provides trace amounts of magnesium, iron, and calcium, as well as fiber, and the essential oils it contains have anti-inflammatory, antibacterial, and digestive-supporting properties; it is traditionally used for indigestion, stomach aches, and to freshen breath. Ground cardamom pairs well with both sweet and savory dishes: baked goods, desserts, coffee and teas, curry blends, marinades, and dishes with rice and lentils. Store in an airtight container away from light, heat, and moisture; whole pods retain their aroma longer, while ground cardamom is best used within a few months.
