Goat cheese
Description
Goat cheese has a distinctive, slightly tangy and earthy flavor, which can vary from mildly creamy (fresh cheeses) to more intense and spicy with a hard rind (aged cheeses). Its color ranges from snow-white to creamy yellow, and its texture can be crumbly and flaky or velvety. Nutritionally, goat cheese provides valuable protein, calcium, phosphorus, and fat-soluble vitamins such as vitamin A, and it often contains less lactose than cow's cheese, making it easier to digest for sensitive individuals. In the kitchen, it works well in salads, tarts, casseroles, as a spread for sandwiches, and as an accompaniment to honey, nuts, and fruits, as well as on pizza and grilled dishes. It should be stored in the refrigerator wrapped in parchment or special cheese paper, at a temperature of about 2–6°C; fresh cheeses are best consumed within a few days, while aged cheeses stay fresh longer, and it's worth taking them out 15–30 minutes before serving to regain their aroma.
