Oregano (fresh)
Description
Oregano (fresh oregano) is an aromatic, green herb with small, hairy leaves and an intense, slightly bitter flavor with hints of camphor and citrus. Fresh leaves are more delicate than dried ones and add a distinctive, fresh accent and a nice green color to dishes. Nutritionally, oregano provides small amounts of vitamins (especially vitamins K and C), minerals (magnesium, iron), as well as antioxidants and compounds with anti-inflammatory and antibacterial properties that support digestion and immunity. In the kitchen, fresh oregano pairs wonderfully with Mediterranean dishes, tomato sauces, grilled meats, fish, salads, and cheeses, adding depth of flavor at the end of cooking or as a fresh garnish. It is best stored wrapped in a damp paper towel in an airtight container in the refrigerator or in a vase with water like fresh herbs; it can also be frozen in portions in ice cube trays with olive oil to preserve its aroma for longer.
