Clarified butter is a transparent, golden liquid with an intense, slightly nutty and buttery aroma and a smooth consistency. Free from milk proteins and water, it has a pure taste that enhances the flavors of dishes without overwhelming them. The nutritional value mainly comes from fat — it provides energy and fat-soluble vitamins A, D, E, and K, is a source of butyric acid and fatty acids with beneficial properties; due to the removal of lactose and proteins, it may be better tolerated by those sensitive to milk, although it should be used in moderation due to its calorie content and saturated fat levels. Clarified butter is perfect for frying and baking due to its high smoke point, ideal for braising, seasoning sauces, roasting, and as a finishing touch for dishes and for spreading on bread.
