Description
Light spelt flour (type 630 or 700) has a delicate, slightly nutty and sweet flavor, as well as a light beige color and fine, loose texture. Type 630/700 indicates a lower ash content and a lighter milling, which gives properties similar to "all-purpose" wheat flours, but with a characteristic hint of spelt. It is a source of protein, fiber, B vitamins, and minerals such as iron, magnesium, and zinc, as well as unsaturated fatty acids, which support satiety and digestion; it contains gluten, although it is often easier to digest than regular wheat. It works well in bread, rolls, cakes, pancakes, and pasta, and can also be mixed with wheat flour for better dough elasticity.
