Spirit vinegar
Description
Spirit vinegar is transparent, colorless or slightly straw-colored, with a distinctly sharp, sour taste and a clean, characteristic aroma; it usually contains 5–10% acetic acid, which gives it strong acidity. Nutritionally, it is virtually calorie-free and does not provide significant amounts of vitamins or protein, containing trace minerals; moderate use may support digestion and improve the flavor balance of dishes, although individuals with a sensitive stomach should use it cautiously. In the kitchen, spirit vinegar is effective for marinades, pickling vegetables, preparing sauces and salads, and balancing salty and sweet flavors; it adds freshness to dishes and extends the shelf life of preserves. Store it in a tightly closed bottle, in a cool and dark place, away from heat sources; with proper storage, it has a very long shelf life.
