Description
Sesame oil has an intense, nutty aroma and a golden-amber color, with the toasted version being darker and more aromatic; it is usually used sparingly as a seasoning for dishes, added "to taste." From a nutritional standpoint, it is a plant-based fat rich in unsaturated fatty acids, vitamin E, phytosterols, and lignans (sesamin, sesamol) with antioxidant and anti-inflammatory properties, which promote heart health and cell protection, although it is calorie-dense and should be used in moderation. In the kitchen, it works well as a finishing touch for Asian dishes, an ingredient in dressings, marinades, sauces, and stir-fries (toasted oil is better added at the end due to its lower smoke point), and it pairs excellently with soy sauce, ginger, and garlic. Store tightly in a cool, dark place; once opened, it can be kept in the refrigerator to extend freshness and prevent rancidity.
