Black olives

🌱 Vegetarian 🌿 Vegan

Description

Black olives are small, oval fruits with a dark, shiny or slightly wrinkled skin and a fleshy, firm texture. Their flavor combines a delicate sweetness with a distinct saltiness and a subtle bitterness, often with earthy and smoky notes depending on the variety and curing method. They are a source of monounsaturated fatty acids, primarily oleic acid, as well as vitamin E, iron, copper, fiber, and polyphenols, which support heart health, have anti-inflammatory properties, and act as antioxidants. In the kitchen, black olives pair wonderfully with Mediterranean dishes, salads, pizza, pasta, tapenade, and as an addition to bread or marinades, adding depth of flavor and aroma. It is best to store them in brine or oil in a cool, dark place before opening, and after opening in the refrigerator, always submerged in liquid and in an airtight container; rinsing before use will reduce saltiness. Freezing changes their texture, so they are rather used for spreads than for decorative pieces.
