Description
Parmesan (flakes or finely grated, optional) is a hard, grainy cheese with a light yellow color and visible protein crystals. It has an intense, nutty-salty, and umami flavor with subtle fruity notes, making it an excellent finishing touch or flavor base. In flake form, it adds texture, while finely grated it melts and evenly enhances dishes. Nutritionally, parmesan is rich in protein, calcium, phosphorus, and vitamin B12, and contains beneficial amino acids and peptides formed during aging; when consumed in moderation, it supports bones and tissue regeneration. Due to its fat and sodium content, it is advisable to use it sparingly. Store in the refrigerator in an airtight container or wrapped in parchment paper and foil, separated from strongly scented products; grated cheese can be frozen for a short time to extend its shelf life.
