Amber cheese
Description
Amber cheese is a semi-hard cheese with a warm, amber color ranging from light yellow to orange, often with a smooth, slightly shiny rind. It has a mild, creamy flavor with subtle malty and nutty notes; smoked versions add a delicate smokiness. The texture is firm, making it easy to slice and melt. Nutritionally, amber cheese provides protein, calcium, and B vitamins, supporting bone development and muscle recovery, but it also contains saturated fats and salt, so it should be consumed in moderation. In the kitchen, it works well on a cheese board, in sandwiches, casseroles, as an ingredient in sauces and grilled dishes, and melts beautifully in toasts and tarts. It should be stored in the refrigerator wrapped in cheese paper or parchment, in an airtight container, and used within 1–3 weeks after opening; freezing is possible but may change the texture.
