Description
Parmesan (grated) is an intense, flavorful cheese with a golden-cream color and a grainy, slightly crumbly texture. The taste is umami, nutty, and salty, with a long, spicy finish; grated, it adds freshness and depth of aroma to dishes, melts quickly, and provides a pleasant texture. It is rich in protein, calcium, phosphorus, and B and A vitamins, which support bone health and metabolic functions, although it also contains saturated fats and salt, so it should be used in moderation. Long aging reduces lactose content, making it easier to digest for some people. Parmesan pairs well with pasta, risotto, soups, salads, sauces, and casseroles as a topping and as a breading ingredient. Store in the refrigerator wrapped in parchment paper and loosely in foil to prevent moisture buildup; it can be frozen, but it will lose some texture, so it's best to grate just before use.
