Description
Fresh parsley for decoration has an intense, vibrant green color and small, curly leaves (in the curly variety) or flat leaves with a smoother texture. The taste is fresh, slightly peppery with a delicate, green bitterness and a citrus note that brightens dishes without overwhelming their aroma. As a low-calorie addition, parsley provides vitamins C, K, and A, folic acid, iron, and strong antioxidants that support immunity, bone health, and metabolic functions. It is most commonly used as a finishing touch to dishes — a sprinkle for soups, salads, meats, fish, and sauces — as well as an ingredient in fresh pesto or chimichurri; it is best added at the end to preserve the freshness of the aroma. To extend its shelf life, store parsley in the refrigerator wrapped in a slightly damp paper towel or placed in a glass of water and covered, using it within a few days; it can also be finely chopped and frozen in oil.
