Mountain oats
Description
Mountain oats have a mild, slightly nutty flavor and a creamy-beige color; they are larger and thicker than quick oats, which allows them to maintain their structure after cooking. They are a source of complex carbohydrates, fiber (including beta-glucan), plant protein, as well as B vitamins and minerals such as iron, magnesium, and manganese, with low fat content. Regular consumption supports digestion, helps lower cholesterol levels and stabilize glycemia, and also provides a long-lasting feeling of fullness. In the kitchen, mountain oats work great in oatmeal, muesli, baking bread and cookies, as an ingredient in bars, puddings, or as a thickener for soups and sauces. Store them in an airtight container in a cool, dry, and dark place, away from moisture and odors; for longer storage, it is advisable to keep them in the refrigerator or freezer, which will extend freshness for several months.
