Beef broth
Description
Beef broth is a clear, golden stock with a deep, intensely meaty aroma and a delicate, sometimes slightly gelatinous consistency when cooled. The flavor is full, umami, with a subtle sweetness from the vegetables and an herbal note, while a thin layer of fat on the surface adds creaminess and carries the aromas. Nutritionally, broth provides a low-calorie liquid rich in soluble collagen proteins, amino acids (e.g., glycine), minerals such as potassium and iron, and electrolytes, which support hydration, tissue regeneration, and the health of joints and the digestive system. In the kitchen, it is a versatile base for soups, sauces, risottos, braised meats, and cooking grains, enhancing the flavor of dishes. Store it chilled in airtight containers in the refrigerator for 3–4 days or freeze for up to 3 months, cooling it in shallow containers and removing excess fat before longer storage.
