Description
Parmigiano Reggiano is a hard, grainy cheese with a straw-golden color and visible tyrosine crystals; it has an intense, nutty-umami flavor with a distinct, pleasant saltiness and slightly fruity notes that deepen with aging. In the kitchen, it is versatile — for grating on pasta, risottos, or soups, as an addition to salads and roasted vegetables, for sauces, and served in pieces with fruits and wine; the rind enriches broths and sauces perfectly. Nutritionally, Parmigiano is rich in protein, calcium, phosphorus, and vitamins A and B12, has a low lactose content after long aging, which aids digestion, but it also contains fat and salt, so it is advisable to consume it in moderation. Store the cheese in a cool place, preferably wrapped in cheese paper or parchment and loosely in foil, avoiding a tight plastic bag; before serving, take it out of the fridge for a moment, and store cut pieces with the rind on, which you can use for broths.
