Description
Pecorino Romano is a hard, aged cheese made from sheep's milk with a salty, spicy, and slightly nutty flavor, featuring a light beige, grainy texture and a hard, sometimes slightly crumbly consistency. The rind is hard and dry, while the interior is dense and easy to grate, making it a distinctive addition to dishes with bold flavors. It works perfectly grated over classic Italian pastas (Cacio e Pepe, Carbonara), as a topping for soups, salads, and roasted vegetables, as well as on a cheese board with honey, figs, and full-bodied wines. Pecorino is rich in protein, calcium, vitamins A and B12, and minerals, supporting bone health and providing valuable nutrients; however, it also contains a fair amount of saturated fat and sodium, so it is best consumed in moderation. Store it in the refrigerator wrapped in parchment or cheese paper, then in a loosely closed container or wrapped in plastic wrap to maintain moisture and aroma; before serving, take it out for a few minutes to reach room temperature, and grated cheese can be frozen, although the texture will change slightly.
