Grated lemon zest
Description
Lemon zest (grated) is a bright yellow strip of the outer layer of the fruit, intensely aromatic due to essential oils, with a fresh, citrus flavor and a slight bitterness if grated too deeply into the white part of the peel. It has a fine, slightly moist texture and a pleasant, energizing scent; before use, it is advisable to wash the lemon thoroughly and remove the white spongy part (bitter pith). Nutritionally, lemon zest is low in calories, rich in vitamin C, antioxidants, and flavonoids, as well as small amounts of fiber, which supports immunity, digestion, and has anti-inflammatory effects; valuable oils may also have antiseptic properties and improve mood. In the kitchen, grated zest is suitable for baked goods, desserts, sauces, dressings, marinades, fish and poultry dishes, and cocktails, pairing well with herbs, ginger, and chocolate. It is stored briefly in an airtight container in the refrigerator or longer in the freezer in portions (ice cubes) or as a dried/ground spice.
