Description
Freshly grated orange zest has an intense, fresh citrus aroma with a distinct, pleasant bitterness when lightly in contact with the white part of the fruit; the small, light orange shavings add color and an immediate fragrance to dishes. From a nutritional standpoint, it provides few calories but is a source of vitamin C, fiber, essential oils (mainly limonene), and flavonoids (e.g., hesperidin), which exhibit antioxidant properties and support digestion and the circulatory system. In the kitchen, it works well in cakes, creams, sauces, dressings, marinades, beverages, and dishes with fish or vegetables, where it enhances the aroma without adding acidity.
