Fresh herbs (dill, parsley)
Description
Fresh herbs — dill and parsley — have an intense, fresh aroma; dill features a delicate anise note and feathery appearance, while parsley has a distinct, slightly peppery flavor and flat or curly leaves of vibrant green. Both are low in calories, rich in vitamins A, C, and K, as well as minerals such as iron and potassium, and antioxidants that support immunity, digestion, and vascular health. In the kitchen, they perfectly complement soups, salads, sauces, fish, potatoes, eggs, and dressings, adding freshness and aroma both in cooking and as a garnish. To maintain freshness, store the herbs in the refrigerator wrapped in a damp paper towel or placed in a glass of water and loosely covered with plastic wrap, changing the water every few days; for longer storage, it's worth freezing chopped herbs in oil in ice cube trays.
