Freshly ground black pepper
Description
Freshly ground black pepper is an intense, spicy-warming seasoning with distinct earthy-citrus and slightly resinous notes; visually, it appears as dark, irregular granules that release their aroma immediately after grinding. Its flavor is sharper and more multidimensional than pre-ground pepper, adding freshness and depth to dishes. Nutritionally, pepper provides virtually zero calories in the amounts used, contains bioactive compounds, primarily piperine, and antioxidants that support digestion, have anti-inflammatory effects, and improve the absorption of certain ingredients (e.g., curcumin). In the kitchen, it is versatile — for meats, fish, sauces, soups, salads, eggs, and vegetables, as well as a finishing spice. To preserve its aroma, store freshly ground pepper in an airtight, opaque container in a cool, dry place, away from light and moisture; it is best to grind just before use.
