Description
Fresh spinach has a delicate, slightly earthy and mildly sweet flavor, with characteristic, intensely green, soft leaves that can be either small (baby) or larger. It is low in calories, rich in vitamins A, C, and K, folic acid, iron, magnesium, and fiber, as well as antioxidants such as lutein and zeaxanthin, which support vision, the immune system, and bone health. It is often used raw in salads and smoothies, briefly sautéed as an addition to pasta dishes, soups, omelets, casseroles, and sauces, as well as stewed as a base for fillings. Store it cool in the refrigerator in a breathable container or wrapped in a paper towel, preferably not washing it until use; consume within a few days. For longer storage, it can be blanched and frozen. People taking anticoagulants should monitor their vitamin K intake.
