Description
Agar-agar is a tasteless, slightly creamy-colored powder or flakes derived from red algae. When cooked, it produces a transparent, elastic jelly with strong gelling properties, stable at room temperature. It is virtually calorie-free and rich in polysaccharide fiber and trace amounts of minerals, making it a valuable plant-based alternative to gelatin; it may support feelings of fullness and proper intestinal function when consumed in moderation. In the kitchen, agar works great in vegan desserts, jellies, creams, mousses, jams, clarifying broths, and in molecular techniques. It requires boiling to dissolve and works in the presence of acids and sugars. Store it dried in a sealed, dry, and cool place, away from moisture; keep finished products with agar in the refrigerator according to food safety guidelines.
