Description

Silken tofu is a delicate, creamy soy cheese with a smooth, almost velvety texture and a subtle, slightly nutty flavor that easily absorbs the aromas of dishes. It resembles very soft cottage cheese or pudding and is often sold in cubes submerged in water. It is an excellent source of plant-based protein, a low-fat product containing iron, calcium (especially if the coagulant was calcium sulfate), and soy isoflavones with potential benefits for heart and bone health. In the kitchen, it works well in creamy soups, sauces, desserts, spreads, and smoothies, as well as a base for dips and dressings, because it easily blends into a smooth consistency and absorbs flavors. Store in the refrigerator in the original liquid or brine, and use within a few days after opening; it can also be frozen, which changes its texture to a firmer and more elastic consistency.
