Smoked plums
Description
Smoked plums have an intense, slightly sweet and sour flavor with a smoky note, and their skin is dark, slightly wrinkled, while the flesh is soft and aromatic. The smoking process adds depth and a subtle bitterness, making them an interesting counterpoint to fatty meats and cheeses. Nutritionally, they are a good source of fiber, potassium, vitamin K, and antioxidants; they contain natural sugars and little fat, which supports digestion, helps regulate bowel movements, and provides nutrients that positively impact the circulatory system and bones. In the kitchen, they work well as an addition to meat dishes (pork, duck), as an ingredient in sauces, fillings, salads, and desserts, as well as on a cheese platter. Store them in an airtight container in a cool, dry place; once opened or if freshly smoked, keep them in the refrigerator and consume within a few days.
