Type C potatoes
Description
Type C potatoes usually have a thin, smooth skin and a creamy, light yellow interior with a delicate, slightly nutty flavor; their flesh is moderately firm, which helps them hold their shape during cooking. They are a source of easily digestible carbohydrates that provide energy, fiber that aids digestion, and vitamins C, B6, and potassium, which positively affect the immune system and the body's electrolyte balance. In the kitchen, type C potatoes are versatile: they are suitable for boiling, salads, baking, casseroles, and stewing, as well as serving as a base for mashed potatoes with a velvety texture. They should be stored in a dry, dark, and cool place at a temperature of about 4–10°C, away from light and fruits that emit ethylene; do not wash before storing to prolong freshness.
