Description
Chicken egg yolks have a creamy, thick consistency and an intense golden-orange color, with a slightly sweet, rich flavor that has a hint of butteriness, enhancing dishes both in aroma and texture. They are rich in high-quality protein, healthy fats, and valuable nutrients — vitamins A, D, E, and K, lecithin, choline, and the antioxidants lutein and zeaxanthin; they also contain cholesterol, so it's advisable to consume them in moderation as part of a balanced diet. In the kitchen, yolks work well as a base for emulsions (mayonnaise, hollandaise sauce), in creams, puddings, ice creams, cakes, and glazes, as well as for enriching pasta and sauces, providing smoothness and structure. Store in the refrigerator in an airtight container and use within 24–48 hours after separation; for longer storage, they can be frozen after lightly whisking with a bit of salt or sugar, and for raw dishes, pasteurized yolks should be used.
