Description
The yolk of a chicken egg has a rich, creamy flavor with a slightly malty note and a smooth, intensely yellow-orange color that gives dishes a velvety texture and attractive color. It is fatty, aromatic, and easily combines with other ingredients, making it a staple in many sauces and creams. It is a source of protein, fats, fat-soluble vitamins (A, D, E, K), B vitamins, choline, and carotenoids lutein and zeaxanthin that support vision; one yolk provides about 50–60 kcal. It positively affects satiety, cognitive functions, and vitamin absorption, although individuals with recommendations to limit cholesterol should consume it in moderation.
