This recipe is the essence of autumn bottled up. The cordial made from roasted apples and cinnamon is a thick, aromatic syrup that serves as the perfect base for creating warming drinks. The process of roasting the apples before cooking brings out their deep, caramelized sweetness that cannot be achieved through traditional methods. Cinnamon, cloves, and star anise add a spiced depth, while fresh lemon balances it all with its refreshing acidity. The finished cordial has a beautiful amber color and an intense aroma of baked apple pie. It can be served hot, simply by pouring boiling water over it, or as an addition to black tea, mulled wine, or even as a topping for ice cream, pancakes, or morning oatmeal. Preparation and baking of apples

Preheat the oven to 200°C (fan) or 220°C (top-bottom). Wash the apples thoroughly under running water. You don't need to peel them - the skin contains pectin, which will naturally thicken the syrup. Cut the apples into quarters and use a small, sharp knife to remove the cores. Then, cut each quarter into 2-3 smaller pieces.

You can use an apple corer to quickly remove the cores before slicing. Even pieces will ensure uniform baking. Do not peel the skins; they are a valuable source of flavor and pectin.

Transfer the chopped apples to a large baking dish or a baking tray lined with parchment paper. Spread them out in a single layer. Place cinnamon sticks, cloves, and, if using, star anise between the apple pieces. Put in the preheated oven and bake for 30-40 minutes.

The apples are ready when they become very soft, their edges start to caramelize and brown slightly, and a wonderful, spicy aroma fills the kitchen. Baking instead of boiling is key to achieving a deep flavor.

Cooking the cordial

Carefully remove the hot dish from the oven. Using a large spoon or spatula, transfer all the contents – the baked apples, spices, and all the juices that have collected at the bottom of the dish – to a large heavy-bottomed pot (at least 4 liters).

Be careful, the dish will be very hot. Use oven mitts. Remember to scrape all the caramelized juices from the bottom of the dish - that's the essence of flavor!

Pour 1 liter of water into the pot with the apples and add brown sugar. Wash and scald the lemon. Using a vegetable peeler or zester, grate only the yellow part of the skin and add it to the pot. Then squeeze the juice from the whole lemon and also pour it into the mixture. If you are using ginger, peel it and cut it into thin slices, then add it to the pot.

Be careful not to grate the white part of the lemon peel (albedo), as it is bitter and can ruin the taste of the cordial. Thoroughly mixing the sugar at this stage will prevent it from burning.

Place a pot over medium heat and bring the mixture to a boil, stirring occasionally to ensure the sugar completely dissolves. Once the liquid starts to boil, reduce the heat to the lowest setting so that it just gently 'flickers'. Cook uncovered for about 30 minutes. The apples will completely break down during this time, and the liquid will thicken slightly.

Do not cook on high heat, as the liquid may become cloudy and the sugar may burn. Gentle cooking allows for the slow extraction of all flavors.

Prepare a large, clean container (a bowl or another pot). Place a fine sieve on top of it. To achieve a perfectly clear cordial, line the sieve with double-layered cheesecloth or a cotton diaper. Slowly and carefully pour the hot contents of the pot into the sieve. Leave it to drain for about 20-30 minutes, until all the syrup has flowed into the container below.

This is the most important step for the clarity of the drink: under no circumstances should you crush or press the fruits through a sieve! This will cause the cordial to become cloudy. Patiently wait for gravity to do its work.

In the meantime, prepare the bottles or jars. Wash them thoroughly, then scald with boiling water or sterilize in an oven preheated to 120°C for 15 minutes. Pour the hot, strained cordial into the hot bottles using a funnel. Seal tightly immediately. Leave to cool completely at room temperature.

Pouring hot liquid into hot bottles (hot pasteurization) extends its shelf life. After cooling, check if the caps are concave - this is a sign that the bottles have sealed properly.

Cordials, known in Europe since the Renaissance, were originally treated as medicinal tonic remedies. Over time, they transformed into popular social drinks. Infusing fruits and herbs in sugar syrup was one of the main methods of preserving summer and autumn flavors for winter.

Serve hot: mix 1 part cordial with 4-5 parts hot water. You can add a slice of fresh orange or a cinnamon stick to the glass. The cordial is also excellent as an addition to black tea, a topping for vanilla ice cream, oatmeal, waffles, or pancakes. It can also be used as a base for non-alcoholic cocktails.

Store in tightly sealed, sterilized bottles in the refrigerator for up to 4 weeks. The high sugar content acts as a natural preservative. For longer storage, the cordial can be frozen in ice cube trays and individual cubes can be used as needed.
