This non-alcoholic apple mulled drink is a warming, incredibly aromatic beverage that will wrap you in its warmth and richness of flavors. The base is naturally cloudy apple juice, which we heat with a bouquet of spicy seasonings: cinnamon sticks, cloves, and star anise. Freshness and a citrus note are added by slices of juicy orange, while a surprising, slightly woody accent is introduced by a sprig of fresh rosemary. The whole is gently sweetened with natural honey, which enhances the depth of flavor. Visually, the drink is stunning – it has a beautiful, deep amber color, and in transparent mugs, you can see the floating spices and fruits. Perfect for chilly evenings, gatherings with family and friends, and also as an elegant, non-alcoholic alternative to traditional mulled wine during the holidays.

Preparation of ingredients

Start by thoroughly preparing the fruits and spices. Wash the orange very carefully under warm, running water, using a vegetable brush. Then pour boiling water over it to remove wax and impurities from the skin. After drying, cut the orange into slices about 0.5 cm thick. Rinse the rosemary sprigs under cold water and gently dry them with a paper towel. If you are using ginger, cut off 2-3 thin slices.

Use a sharp knife and a stable cutting board. Scrubbing and blanching the orange is crucial, as it will be heated along with the peel, which could release undesirable substances into the drink.

Combining and heating

In a large pot (with a capacity of at least 2 liters), pour in the entire liter of apple juice. Add the prepared orange slices, two cinnamon sticks, about 10 cloves, two star anise, and one sprig of rosemary. If using, also add the ginger slices. Keep the second sprig of rosemary for decoration. Place the pot on the stove over medium heat.

The best choice is a pot with a thick bottom that evenly distributes heat and minimizes the risk of burning the juice. At this stage, do not add honey yet.

Brewing the drink

Heat the drink slowly, gently stirring with a wooden spoon from time to time. Watch the liquid – when small bubbles start to appear at the edges of the pot and steam rises from the surface, immediately reduce the heat to the minimum. The drink should be gently 'steeping', but not boiling. Cover the pot with a lid, leaving a small gap, and let it infuse with flavors for about 20-25 minutes.

This is the most important step! Absolutely do not bring the mulled wine to a boil. Too high a temperature will make the spices bitter, and the delicate aromas of the juice and orange will evaporate. Patience is the key to deep flavor here.

Sweetening and finishing

After 20-25 minutes, remove the pot from the heat. Your home should already smell like the holidays! Allow the drink to cool for 2-3 minutes. Then add two tablespoons of honey and mix thoroughly until completely dissolved. Taste the drink, and if you prefer a sweeter flavor, add another tablespoon of honey. Remember that the flavor will continue to develop.

Adding honey to slightly cooled liquid (below 60°C) helps preserve its valuable health properties. If you are using maple syrup, you can add it right away. Always taste and adjust the sweetness level to your own preferences.

Serving

Pour the hot mulled wine into mugs or glasses made of thick, heat-resistant glass. You can do this using a ladle, pouring the drink through a small strainer to remove the spices, or serve it in a rustic style along with them. Place a fresh slice of orange in each mug (you can use those from cooking or fresh ones) and garnish with the remaining sprig of rosemary. Serve immediately while hot.

For a 'wow' effect, you can stick 2-3 cloves into a fresh slice of orange for decoration. The drink looks beautiful and additionally releases aroma while drinking. Be careful when pouring hot liquid!

Mulled wine can be stored in the refrigerator in a tightly sealed container (e.g., a jar or bottle) for up to 3 days. Before storing, it is best to strain it from the spices and fruits to prevent it from becoming bitter. Before serving again, gently heat it in a pot over low heat, avoiding boiling.
