Remove the cottage cheese from the packaging and transfer it to a large bowl. If the cottage cheese is very watery, set it aside in a strainer for 5–10 minutes to let some of the whey drain off. Then use a fork: press the cottage cheese and crumble it until there are no large lumps and the mixture becomes creamy with noticeable small lumps.

Use a large, wide bowl (preferably ceramic or glass) and a regular fork. Do not blend with a mixer – we want to preserve the texture of the rustic cottage cheese. A common mistake: mixing too aggressively results in a uniform, plastic-like consistency.

Wash the mint leaves under cold water and gently dry them with a paper towel. Tear the leaves from the stems and finely chop them with a knife (using a rocking motion on the board, do not chop in one position). Squeeze the juice from half a lemon — place a strainer over a small bowl to remove seeds and larger fibers. If you want to add more flavor, grate a thin layer of zest from the lemon before squeezing.

In a bowl with crumbled cottage cheese, add 2/3 of the linden honey (save the rest for drizzling on top), lemon juice, and a pinch of salt and pepper. If you are using rapeseed oil, add one tablespoon. Mix everything evenly with a spoon or spatula: stir slowly, lifting the mixture from the bottom to the top, until the ingredients are combined and the mixture is creamy, slightly shiny, and uniform. Finally, gently fold in the chopped mint, leaving a few leaves for decoration.

Use a wooden spoon or silicone spatula. Stir gently — the goal is to combine the ingredients without losing the crumbly texture of the cottage cheese. If the mixture seems too thick, add a little (1–2 teaspoons) of cold water or more lemon juice.

Cleaning and storage: wash the dishes and dry them. If you have leftover cottage cheese, transfer it to an airtight container and store it in the refrigerator. Store cottage cheese with additions at a temperature of 2–6°C for a maximum of 24–36 hours — mint and honey add flavor, but the freshness of the cottage cheese is key.

Transfer the prepared cottage cheese to a serving platter or four small bowls. Use a spoon to shape nice portions: scoop with a spoon and arrange in a slightly oval shape. Drizzle the remaining linden honey in a thin stream along each portion, so that the honey glistens and creates appetizing spots.
