Brewing
Pour 1500 ml of fresh water into a kettle and bring it to a boil. When the water reaches a boil, remove it from the heat and wait 30-40 seconds (the temperature will drop to about 95°C) — water that is too hot can extract bitterness from some ingredients. In a large pot, add dried apples, dried cranberries, 40 g of fruit tea blend, ginger slices, 2 whole cinnamon sticks (leave the remaining 0-4 for decoration), 2-3 star anise, and 2 g of cloves, as well as 4 slices of lemon. Pour in the hot water, cover the pot with a lid, and let it steep for 15 minutes.
Straining
After 15 minutes, remove the lid and check the aroma: the infusion should smell fruity and spicy, without a sharp bitter note. Set a fine sieve over another pot or jug and strain the contents of the pot. Gently press the larger pieces of fruit with a spoon to extract the juice, but do not crush them too much to avoid introducing sediment.
Sweetening and seasoning
Heat the filtered infusion over low heat — it should only gently move, do not bring to a boil. Add honey (60 g) if using (or 50 g of brown sugar for the vegan version) and stir for 1-2 minutes until completely dissolved. Taste the infusion and if necessary, add the juice of half a lemon (about 20-30 g) — adding the juice will enhance the aromas and balance the sweetness.
Finishing
After seasoning, turn off the heat and let the pot sit for 2 minutes. Remove larger spices (cinnamon sticks, star anise, cloves) if you want a clearer brew. Pour the tea into a thermos or glass pitcher to keep it warm before serving. If you are serving the alcoholic version, prepare small glasses with rum — add 15-20 ml of rum to each serving just before pouring the tea.
Serving
Pour hot tea into warmed glasses or mugs (first rinse them with hot water), using a spoon or ladle. Place a slice of lemon and a cinnamon stick in each glass for decoration. If you like, add an extra slice of fresh lemon on the rim of the glass. Serve immediately — the tea tastes best hot.
Storage and Reheating
If you have leftover tea, cool it to room temperature for a maximum of 20-30 minutes, then transfer it to an airtight container and store it in the fridge for up to 48 hours. To reheat, warm the contents of the pot over low heat to a temperature of about 70-80°C — do not let it boil to avoid losing the aroma. Add any sweetener after reheating and stir.
