Description

Aromatic fruit tea is a warming, non-alcoholic drink made from dried fruits, a tea blend, and spices. Perfect for New Year's Eve 2025 as an alternative to hot drinks — it smells of lemon, ginger, and cinnamon, has the natural sweetness of dried apples and cranberries, and a slightly spicy aftertaste. Served in glasses with a slice of lemon and a cinnamon stick, it looks very impressive, and the taste can be adjusted with honey or ... optionally add rum for adults. Excellent for serving at parties, family gatherings, and during cool winter evenings — it looks nice in transparent glasses, is vegan if honey is omitted, and is easy to prepare in larger quantities.

Preparation of ingredients

Gather all the ingredients and utensils: a large pot with a capacity of at least 2 liters, a kettle, a fine sieve or cheesecloth, a cutting board, a sharp knife, a stirring spoon. Wash the lemons under running water. Slice one lemon into thin rounds (about 6-8 slices) for decoration and infusion, and cut the other in half for juicing if you want a more pronounced tartness. Peel the ginger and slice it into thin pieces about 2-3 mm thick.

Use a large enameled or stainless steel pot (minimum capacity 2 L). Chopped ginger retains its aroma better when cut with a sharp knife. Prepare a fine mesh strainer or a layer of cheesecloth to thoroughly strain out the small pieces.

Brewing

Pour 1500 ml of fresh water into a kettle and bring it to a boil. When the water reaches a boil, remove it from the heat and wait 30-40 seconds (the temperature will drop to about 95°C) — water that is too hot can extract bitterness from some ingredients. In a large pot, add dried apples, dried cranberries, 40 g of fruit tea blend, ginger slices, 2 whole cinnamon sticks (leave the remaining 0-4 for decoration), 2-3 star anise, and 2 g of cloves, as well as 4 slices of lemon. Pour in the hot water, cover the pot with a lid, and let it steep for 15 minutes.

Use a strainer or slotted spoon to place heavier ingredients. Covering the pot helps retain the aromas in the drink. If you are using a stronger tea blend, shorten the steeping time to 10-12 minutes to avoid bitterness.

Straining

After 15 minutes, remove the lid and check the aroma: the infusion should smell fruity and spicy, without a sharp bitter note. Set a fine sieve over another pot or jug and strain the contents of the pot. Gently press the larger pieces of fruit with a spoon to extract the juice, but do not crush them too much to avoid introducing sediment.

Use a fine sieve or a double layer of cheesecloth to prevent small bits from passing through. If you want clear tea, strain the infusion through the sieve twice.

Sweetening and seasoning

Heat the filtered infusion over low heat — it should only gently move, do not bring to a boil. Add honey (60 g) if using (or 50 g of brown sugar for the vegan version) and stir for 1-2 minutes until completely dissolved. Taste the infusion and if necessary, add the juice of half a lemon (about 20-30 g) — adding the juice will enhance the aromas and balance the sweetness.

Do not boil the infusion after adding honey — high temperatures destroy some of the enzymes and aromas of honey. Stir with a wooden spoon or silicone spatula.

Finishing

After seasoning, turn off the heat and let the pot sit for 2 minutes. Remove larger spices (cinnamon sticks, star anise, cloves) if you want a clearer brew. Pour the tea into a thermos or glass pitcher to keep it warm before serving. If you are serving the alcoholic version, prepare small glasses with rum — add 15-20 ml of rum to each serving just before pouring the tea.

Separating the alcohol before pouring the drink allows each guest to decide whether they want the alcoholic version. For storage at the party, use a thermos with a capacity of at least 1 L.

Serving

Pour hot tea into warmed glasses or mugs (first rinse them with hot water), using a spoon or ladle. Place a slice of lemon and a cinnamon stick in each glass for decoration. If you like, add an extra slice of fresh lemon on the rim of the glass. Serve immediately — the tea tastes best hot.

The best glass is a transparent, heat-resistant tea glass (about 250-300 ml). A cinnamon stick also serves as a stirrer. Do not pour the drink into plastic cups, as hot tea will affect the taste.

Storage and Reheating

If you have leftover tea, cool it to room temperature for a maximum of 20-30 minutes, then transfer it to an airtight container and store it in the fridge for up to 48 hours. To reheat, warm the contents of the pot over low heat to a temperature of about 70-80°C — do not let it boil to avoid losing the aroma. Add any sweetener after reheating and stir.

Do not store tea for longer than 48 hours — dried fruits can release too much intense flavor and dark color. Use a thermos or a double-walled jug if you want to keep it warm for a shorter time.
