After 9 minutes of boiling, immediately remove the eggs from the boiling water using a slotted spoon and transfer them to the prepared ice bath. Leave them in the cold water for at least 15 minutes until completely cooled. Then gently tap the shell of each egg against a hard surface (e.g. kitchen counter) and peel them under a stream of cold water.

Peel and dry the eggs, then cut them in half lengthwise with a sharp knife. Using a small spoon (e.g., a teaspoon), gently remove the yolks from each half and transfer them to a medium-sized bowl. Try not to damage the whites. Place the empty halves of the whites on a serving platter or large plate where you will serve the appetizer.

Immediately drizzle everything with lime juice. Peel the red onion and chop it into very small cubes (known as brunoise). Finely chop the fresh coriander leaves as well. Add the onion and coriander to the bowl.

Lime juice is key – its acidity prevents the avocado from oxidizing and keeps the filling a beautiful green color. The finer you chop the onion, the better the consistency of the cream will be.

Using a fork, vigorously mash the egg yolks with the avocado flesh until you achieve a smooth, creamy paste. Small lumps are acceptable and will add an interesting texture to the paste. Add salt and freshly ground black pepper. Mix all the ingredients thoroughly. Taste the filling and, if necessary, season it with an extra pinch of salt or a few drops of lime juice.

Do not use a blender or food processor, as they can make the mixture too runny and sticky. A fork is the best tool for this task. Remember that the flavor of the chilled dish is less intense, so the filling should be a bit more pronounced in taste than intended.

Fill the halves of the egg whites with the prepared filling. You can do this in two ways: the simpler method, using two small teaspoons to scoop the paste and form neat mounds; or the more decorative method, transferring the filling to a piping bag with a decorative tip (e.g., star-shaped) and squeezing it into the egg whites, creating fancy rosettes.
If you don't have a piping bag, you can use a sturdy ziplock bag. Just transfer the filling into the bag, seal it, and then cut off one of the corners to create a homemade piping bag.

Just before serving, garnish the eggs. Lightly sprinkle each half with a pinch of smoked sweet paprika, which will add color and a smoky aroma. If you enjoy spicier flavors, you can also use chili flakes. Place a small leaf of fresh cilantro on top of each egg. Serve immediately or after a short chill in the refrigerator.
