Preparing the fruits

Prepare the forest fruits: if you are using a frozen mix, take it out of the freezer and let it sit for 10–15 minutes to slightly thaw and release some juice. If the fruits are fresh, rinse them under cold water and drain in a colander. Transfer the fruits to a wide bowl or mortar.

Use a wide bowl or a large mortar. Do not crush the fruits into a paste — the goal is to lightly mash them to release the aroma. A common mistake: crushing too intensely makes the drink cloudy and too thick.

Gently crush the fruits with a cocktail muddler or the end of a wooden spoon for 20–30 seconds — the goal is to release the juices and aromas, not to completely break them down. The fruits should remain visible as pieces, and the juice that flows out should lightly tint the bottom of the container.

Use a cocktail muddler or the handle of a wooden spoon. Control the force: if you see a lot of liquid mass and few pieces, stop — that's a sign you've crushed too hard.

Mixing the cocktail

In a large pitcher (with a capacity of at least 1.5–2 l), pour in the pomegranate juice (400 ml), fresh orange juice (300 ml), and lime juice (30 ml). Add the crushed fruits along with the released juice and stir with a wooden spoon for 20–30 seconds, until the mixture is homogeneous.

Use a clear pitcher to control the color and amount of fruit. If you don't have a pitcher, use a large bowl and then transfer to a carafe. A common mistake: adding prosecco before the rest causes a loss of fizz — always add the sparkling at the end.

Place the pitcher with the mixture in the refrigerator for 10 minutes — this will slightly chill the drink and allow the flavors to meld. After 10 minutes, remove the pitcher and add ice cubes (about 400 g) and 800 ml of chilled prosecco. Gently stir with a wooden spoon for 10–15 seconds to avoid losing the fizz. The cocktail should have a fresh, slightly sparkling texture and a clear surface with visible pieces of fruit.

Use cool prosecco straight from the fridge. Stir slowly and gently — too vigorous stirring will break the bubbles and cause frothing. If you want a stronger sparkling effect, add the prosecco just before pouring into the glasses.

Sweetening (optional)

Taste the mixture. If you want a sweeter cocktail, gradually add agave syrup (60 ml) in increments of 10 ml, mixing and tasting after each addition until you reach the desired sweetness. If you are not using agave, do not add anything — the juices are often enough.

Prepare champagne glasses or tall glasses. Place 1–2 tablespoons of crushed fruit and a few ice cubes at the bottom of each vessel (if you are using coupe glasses, you can skip the ice). Slowly pour the cocktail so that some of the fruit remains evenly distributed. Garnish each serving with a teaspoon of pomegranate seeds (about 7–8 g per serving) and a mint leaf.

Non-alcoholic variant (option)

To prepare a non-alcoholic version: replace the prosecco with 800 ml of well-chilled sparkling water (mineral or soda) and add an additional 100 ml of orange juice to maintain the flavor balance. Follow the same steps as above.

Use good quality sparkling water, chilled. A common mistake: using sparkling water with a strong mineral flavor can disrupt the fruity profile — choose neutral or lightly carbonated water.

Serve the cocktail immediately after preparation; it is best fresh and chilled — storing it longer will result in a loss of fizz and intensity of flavors.
