Prepare your workspace: preheat the grill to medium-high temperature (about 200–230°C) or set a grill pan over medium heat. Wash the watermelon and lime under running water. Gather all your tools: cutting board, sharp knife, grill tongs, pastry brush (if using honey), blender, strainer, and mixing jug.

Use a charcoal grill, gas grill, or grill pan. If using a charcoal grill, wait until the coals are evenly glowing; on the pan, set an even heat. The board should be stable, and a very sharp knife will make it easier to cut the watermelon.

Preparing the watermelon

Cut the watermelon into slices 2–3 cm thick (it's easiest to cut by turning it to give the slices a crescent shape). You don't need to remove all the rind — leave a thin layer to make it easier to turn the slice on the grill. Remove any visible seeds with a sharp knife. After grilling, cut the flesh from each slice right next to the rind to easily separate the flesh from the rind.

Use a large, sharp chef's knife and a stable cutting board. Be careful when cutting large fruits — press the slice down with your hand and cut with a steady motion. If the watermelon is very soft, reduce the thickness of the slices to 1.5 cm.

Grilling watermelon

Place the watermelon slices on a hot grill or grill pan. Grill for 2–3 minutes on one side until visible dark stripes (grill marks) appear and the flesh slightly softens. Gently turn with tongs and grill for another 1–2 minutes on the other side. Avoid grilling for too long — the watermelon should remain juicy, not dried out.

Use tongs to turn, do not pierce with a fork (you'll release the juices). If you want a stronger caramelization, lightly brush with honey before grilling (optional). The grill pan should be well heated and lightly oiled — use spray or a little oil on a paper towel to wipe the grill.

Preparation of lime juice

Grate the zest of one lime thinly (only the green part, avoiding the bitter white layer). Cut the limes in half and squeeze the juice by hand or using a citrus juicer until you obtain about 60–80 ml of juice. Remove any seeds that could add bitterness.

Use a fine grater (microplane) and a manual juicer to extract more juice. The zest will provide additional aroma — grate gently, do not grate too hard.

Blending

Cut the grilled flesh away from the skin and toss the watermelon pieces into a blender. Add fresh basil leaves (start with half), lime juice, and a pinch of salt. Blend on high speed for 30–45 seconds until the mixture is smooth and uniform. If you want a sweeter cocktail, add honey (optional) and briefly blend again.

Use a high-power blender or an immersion blender. If the blender has trouble breaking down the ingredients, add 50 ml of sparkling water to make blending easier. Do not blend for too long — just a few seconds is enough to avoid over-aerating the drink.

Straining (optional)

If you prefer a smooth, clear cocktail, strain the blended mixture through a fine sieve into a jug, pressing with a spoon to extract as much juice as possible. The remaining pulp can be used for dessert or a chilled snack.

Use a metal strainer with fine mesh and a spoon or thick material (a muslin cloth) for thorough squeezing. If you want to keep some pulp, skip this step.

Finishing and serving

To the strained or unstrained juice in the pitcher, add chilled sparkling water (400 ml) and gently stir with a spoon from the bottom up to preserve the bubbles. Taste and sweeten with honey if needed or add more lime juice. Serve in tall glasses with ice cubes (optional), garnished with a basil leaf and a slice of lime on the rim of the glass.

The best are highball glasses. Use a long bar spoon for mixing. If you want an alcoholic version, add 30–40 ml of vodka to each serving (optional).
