Preparing the watermelon
Cut the watermelon into slices 2–3 cm thick (it's easiest to cut by turning it to give the slices a crescent shape). You don't need to remove all the rind — leave a thin layer to make it easier to turn the slice on the grill. Remove any visible seeds with a sharp knife. After grilling, cut the flesh from each slice right next to the rind to easily separate the flesh from the rind.
Grilling watermelon
Place the watermelon slices on a hot grill or grill pan. Grill for 2–3 minutes on one side until visible dark stripes (grill marks) appear and the flesh slightly softens. Gently turn with tongs and grill for another 1–2 minutes on the other side. Avoid grilling for too long — the watermelon should remain juicy, not dried out.
Preparation of lime juice
Grate the zest of one lime thinly (only the green part, avoiding the bitter white layer). Cut the limes in half and squeeze the juice by hand or using a citrus juicer until you obtain about 60–80 ml of juice. Remove any seeds that could add bitterness.
Blending
Cut the grilled flesh away from the skin and toss the watermelon pieces into a blender. Add fresh basil leaves (start with half), lime juice, and a pinch of salt. Blend on high speed for 30–45 seconds until the mixture is smooth and uniform. If you want a sweeter cocktail, add honey (optional) and briefly blend again.
Straining (optional)
If you prefer a smooth, clear cocktail, strain the blended mixture through a fine sieve into a jug, pressing with a spoon to extract as much juice as possible. The remaining pulp can be used for dessert or a chilled snack.
Finishing and serving
To the strained or unstrained juice in the pitcher, add chilled sparkling water (400 ml) and gently stir with a spoon from the bottom up to preserve the bubbles.
