Preparation steps
Pour the entire liter of cloudy apple juice into the pot with orange juice. Add the previously prepared orange slices. Toss in all the spices: two cinnamon sticks, about 10 whole cloves, two star anise, and two fresh sprigs of rosemary. If you choose to use ginger, peel it and slice it thinly, then add it to the pot as well.
Place the pot on the stove over medium heat. Slowly heat the mixture, gently stirring with a wooden spoon from time to time. Watch the liquid – your goal is to bring it to the point where it starts to steam, and very small bubbles appear at the edges of the pot. This is just before boiling.
As soon as you notice that the drink is very hot (but not boiling), immediately reduce the burner to the absolute minimum. Cover the pot with a lid, leaving a small gap for the steam to escape. Leave the cider on low heat for about 20-25 minutes. During this time, the flavors and aromas of all the ingredients will combine, creating a deep and complex composition.
After 20-25 minutes, turn off the heat. Using a slotted spoon or kitchen tongs, carefully remove the larger pieces from the drink: orange slices, cinnamon sticks, star anise, and rosemary sprigs. Now taste the cider. If you find it not sweet enough, add one tablespoon of maple syrup, mix well, and taste again. Gradually add syrup until you reach your perfect level of sweetness.
Pour the hot, aromatic cider into mugs or thick, heat-resistant glasses using a ladle. To make the drink look even more beautiful, you can add a fresh slice of orange, a small cinnamon stick, or a small sprig of rosemary to each vessel. Serve immediately to enjoy its warming power.
