Preparation steps
Preparing the syrup
Place all the prepared ingredients for the syrup in a medium-sized pot (with a capacity of about 2 liters). Add the chopped pears, ginger slices, cinnamon sticks, cloves, and brown sugar. If using, also add the star anise now. Pour in 500 ml of cold water.
Place a pot over medium heat and bring the mixture to a boil, stirring occasionally with a wooden spoon to dissolve the sugar. Once the syrup starts to boil, reduce the heat to the lowest setting so that the liquid just gently 'flickers'. Cover the pot and simmer for about 15-20 minutes. The syrup is ready when the pears become very soft and an intense, spicy aroma fills the kitchen.
Remove the pot from the heat. Prepare a bowl or pitcher and place a fine-mesh strainer on top. Carefully pour the entire contents of the pot through the strainer. Using the back of a spoon or spatula, press the fruits and spices firmly against the strainer to extract as much aromatic juice as possible. You can discard the pulp left in the strainer.
Set the strained syrup aside to cool completely – this will take about 30-40 minutes at room temperature. Once the syrup is cool, add freshly squeezed lemon juice and mix thoroughly. The lemon juice will balance the sweetness and add freshness to the drink.
Beverage composition
Prepare four tall glasses (highball or collins type, with a capacity of about 300-350 ml). Fill each glass about 2/3 full with ice cubes. The ice will not only chill the drink but also ensure it dilutes more slowly.
Measure an equal amount of chilled pear-ginger syrup into each glass. For 4 servings, this will be about 100-120 ml of syrup per glass (about 1/4 of the prepared syrup volume). Pour the syrup directly over the ice.
Carefully and slowly fill each glass with very cold sparkling water. Pour the water down the side of the glass or over a spoon to preserve as many bubbles as possible. The drink should fill the glass almost to the brim.
Take a long bar spoon or a straw and gently stir the drink, making one or two movements from bottom to top to combine the syrup with the water, but do not 'disturb' the bubbles. Garnish each glass with a sprig of fresh mint. Serve immediately while the drink is cold and sparkling.
