Preparation of ingredients

Start by preparing the fresh ingredients. Rinse the orange thoroughly under running water, then blanch it in boiling water, pouring it slowly from all sides. Dry it with a paper towel. Using a sharp knife on a cutting board, slice half of the orange into thin slices about 0.5 cm thick. From the other half, grate only the orange part of the peel (zest) using a fine grater. Peel the ginger root with a teaspoon or a small knife, then slice it into thin pieces.

It is best to use a large pot with a thick bottom (capacity of about 3 liters), which will prevent burning and ensure even heating. Blanching the oranges is important to remove wax and impurities from the peel.

In the prepared pot, place all the spices: cinnamon sticks, cloves, and star anise. Add the orange slices, grated zest, and ginger slices. Then pour in the entire apple juice and cranberry juice. Gently stir everything with a wooden spoon to combine the ingredients.

At this stage, do not add honey or alcohol yet. Honey will lose its properties at high temperatures, and the alcohol will evaporate. Distributing the spices at the bottom of the pot before pouring in the juices will help them release their aroma more quickly.

Place a pot on the stove over medium heat. Slowly heat the drink, stirring regularly, until it is very hot and small bubbles start to appear at the edges of the pot – this will take about 5-7 minutes. It is absolutely crucial not to let the mulled wine come to a boil. As soon as you notice that the drink is about to boil, immediately reduce the burner to the lowest setting.

Boiling the drink may cause the juices to become cloudy and lose some vitamins, while the spices may take on a bitter taste. Watch the drink closely – the goal is gentle 'steeping', not boiling.

Cover the pot with a lid, leaving a small gap, and let the drink steep on the lowest heat for about 15-20 minutes. This time will allow the spices to fully release their aromas and flavors, which will infuse into the juices, creating a rich and complex composition.

The longer the drink steeps, the more intense its flavor will be. If you have time, you can steep it for up to 30 minutes. Remember to keep the heat really low, so the drink just gently 'flickers'.

Remove the pot from the heat. Taste the drink and decide if it needs sweetening. If so, add honey or maple syrup (start with one tablespoon) and stir until completely dissolved. If you are making the adult version, this is the time to add rum or brandy. Strain the mulled wine through a fine mesh sieve into heatproof mugs or glasses to separate the spices. For garnish, you can add a fresh slice of orange, a cinnamon stick, or a few fresh cranberries to each serving.

Use a ladle to pour the drink to avoid spills. Serve immediately while it's hot. If you want to leave the spices in the drink for visual effect, inform your guests to be careful of them while drinking.
