Preparation steps
In a large pot with a thick bottom (with a capacity of at least 2-3 liters), place the washed cranberries, prepared orange slices, and all the spices: cinnamon sticks, cloves, and star anise. If you are adding ginger, toss it in now. Pour everything with apple juice.
Place a pot on medium heat and slowly heat until the drink is very hot, but do not bring it to a boil. When small bubbles begin to appear on the surface at the edges of the pot, immediately reduce the heat to the lowest setting. Cover the pot with a lid, leaving a small gap, and simmer for 20-25 minutes. During this time, the cranberries will start to burst and release their juice, and the spices will impart their aroma.
After about 20 minutes, remove the pot from the heat. Using a clean spoon, carefully taste the drink to assess its sweetness. Apple and orange juices have different levels of sweetness. If you find the mulled drink too sour, add optional maple syrup. Start with one tablespoon, mix well, and taste again. Gradually add until you reach the desired flavor.
Prepare heatproof mugs or glasses. Place a fine-mesh strainer on top of them. Slowly pour the hot drink through the strainer directly into the mugs using a ladle, to separate it from the overcooked fruits and spices. This will ensure that the mulled wine is clear and pleasant to drink.
