Preparation steps

1

Start by preparing the fruits. Rinse the cranberries thoroughly in a sieve under cold running water and drain, removing any spoiled berries. Scrub the orange with a brush in warm water, then blanch it in boiling water to remove wax and impurities from the skin. Cut it into slices about 0.5 cm thick. If you are using optional ginger, peel it with a teaspoon (this is the easiest way to avoid wasting the flesh) and slice it thinly.

Ingredients: Fresh cranberry, Orange, Fresh ginger
Use a sharp knife to cut the orange so that the slices are even and not torn. Blanching the orange is key if you plan to cook it with the peel, which is recommended for full flavor.
2

In a large pot with a thick bottom (with a capacity of at least 2-3 liters), place the washed cranberries, prepared orange slices, and all the spices: cinnamon sticks, cloves, and star anise. If you are adding ginger, toss it in now. Pour everything with apple juice.

Ingredients: Natural apple juice (cloudy), Fresh cranberry, Orange, Cinnamon stick, Cloves, Star anise, Fresh ginger
A pot with a thick bottom prevents the sugars from the juice and fruits from burning during heating. The arrangement of the ingredients does not matter; just place them all together in the pot.
3

Place a pot on medium heat and slowly heat until the drink is very hot, but do not bring it to a boil. When small bubbles begin to appear on the surface at the edges of the pot, immediately reduce the heat to the lowest setting. Cover the pot with a lid, leaving a small gap, and simmer for 20-25 minutes. During this time, the cranberries will start to burst and release their juice, and the spices will impart their aroma.

It is crucial NOT TO BOIL the drink. Boiling can cause the juice to become cloudy and lose some of its delicate aromas. Slow heating 'extracts' flavor from the spices. You will know it's ready when a wonderful, spicy aroma starts to waft throughout the house.
4

After about 20 minutes, remove the pot from the heat. Using a clean spoon, carefully taste the drink to assess its sweetness. Apple and orange juices have different levels of sweetness. If you find the mulled drink too sour, add optional maple syrup. Start with one tablespoon, mix well, and taste again. Gradually add until you reach the desired flavor.

Ingredients: Maple syrup
Always add the sweetener at the end of cooking, after the flavors have melded. Stir the drink with a large spoon to dissolve the syrup evenly. If you don't have maple syrup, you can use honey, but add it only when the drink has slightly cooled down so that the honey doesn't lose its properties.
5

Prepare heatproof mugs or glasses. Place a fine-mesh strainer on top of them. Slowly pour the hot drink through the strainer directly into the mugs using a ladle, to separate it from the overcooked fruits and spices. This will ensure that the mulled wine is clear and pleasant to drink.

You can also serve the drink without straining if you like a 'rustic' look with the fruit in the cup. However, if you want an elegant, clear drink, straining is necessary. Be careful, the drink is very hot!
6

To make the drink look even more appetizing, garnish each serving. You can add a few fresh cranberries to the cup, a thin slice of fresh orange, or for a beautiful contrast of colors and a forest aroma, place a sprig of fresh rosemary. Serve immediately while it's hot.

Ingredients: Fresh rosemary
Decoration is the final touch that makes the drink special. Choose one or two decorative elements to avoid overloading the cup. You can also use a cinnamon stick as a stirrer.

Fun Fact

💡

Mulled drinks, known as 'wassail' in Anglo-Saxon tradition, were once part of rituals aimed at ensuring good apple harvests in the coming year. People sang songs and drank hot, spiced cider, 'toasting' the health of the trees in the orchards.

Tips

🍽️ Serving

Serve in thick glass mugs with a handle or stoneware mugs that retain heat well. You can add a fresh slice of orange and a cinnamon stick to each serving for decoration. For adults, you can enhance the drink by adding 25 ml of dark rum or brandy per serving just before serving.

🥡 Storage

Mulled wine can be stored in the refrigerator for up to 3 days. After cooling, pour it (along with the fruits and spices) into a glass jar or pitcher. Before serving again, heat it slowly over low heat, without bringing it to a boil.
