Freshness and a citrus note are added by slices of juicy orange, while a truly unique, slightly woody character comes from sprigs of fresh rosemary. The result is a drink with a deep amber color, in which whole spices and fruits float, creating a beautiful, rustic appearance. The flavor is perfectly balanced – the natural sweetness of the apples is complemented by the spiciness of the spices and the subtle acidity of the orange. It is an excellent alternative to traditional alcoholic mulled drinks, perfect for the whole family, including children. Cooking mulled wine
In a medium-sized pot (with a capacity of about 2-3 liters), pour in the entire liter of apple juice. Add the previously prepared orange slices, cinnamon sticks, cloves, star anise, and two sprigs of fresh rosemary. If you decided to use ginger, add its slices now.
Place a pot on the stove over medium heat. Slowly heat the mixture until it becomes very hot and the first small bubbles start to appear at the edges of the pot. This is a very important moment – do not let the drink boil! Boiling would destroy the delicate aromas of the spices and the vitamins.
When the drink is hot, reduce the heat to the absolute minimum, just enough to maintain the temperature without boiling. Cover the pot with a lid, leaving a small gap, and let the mulled wine 'infuse' for about 15-20 minutes. During this time, the spices will release their essential oils, and the flavors will blend perfectly.
Serving
Remove the pot from the heat. Now is the time to sweeten the mulled wine if desired. If you are using honey, add it now when the drink is no longer boiling. Start with one tablespoon, mix thoroughly until the honey dissolves, and then taste. Add more if you think it's necessary, until you achieve the desired sweetness.
Prepare mugs or glasses made of thick glass. Using a ladle, carefully pour the hot drink. You can strain it through a small sieve if you don't want any spices in the mug, but mulled wine looks much better served with a slice of orange and a star anise. Garnish each serving with a fresh sprig of rosemary and optionally a fresh slice of orange on the rim of the mug. Serve immediately while hot.
