This beverage is the perfect choice for chilly days, warming the body and soothing the senses. Its base is naturally cloudy apple juice, which, during the slow heating process, becomes infused with a bouquet of spicy aromas: cinnamon, cloves, and star anise. Freshness and a citrus note are added by slices of juicy orange, while a truly unique, slightly woody character comes from sprigs of fresh rosemary. The result is a drink with a deep amber color, in which whole spices and fruits float, creating a beautiful, rustic appearance. The flavor is perfectly balanced – the natural sweetness of the apples is complemented by the spiciness of the spices and the subtle acidity of the orange. It is an excellent alternative to traditional alcoholic mulled drinks, perfect for the whole family, including children. Served hot in your favorite mug, it becomes a synonym for home warmth and relaxation.

Preparing the ingredients

Start by thoroughly preparing the orange. Since we will be using it with the peel, you need to wash it carefully. Place the orange in the sink and pour boiling water from the kettle over it generously, then scrub it with a clean, stiff sponge or vegetable brush. Dry the fruit with a paper towel. Using a sharp knife, cut off the ends, then slice the orange into pieces about 0.5 cm thick.

Ingredients: Orange, Fresh ginger
Use a cutting board and a sharp chef's knife. Blanching the oranges helps remove wax and impurities from the peel. If you are using ginger, scrub it as well and cut it into thin slices.

Cooking mulled wine

In a medium-sized pot (with a capacity of about 2-3 liters), pour in the entire liter of apple juice. Add the previously prepared orange slices, cinnamon sticks, cloves, star anise, and two sprigs of fresh rosemary. If you decided to use ginger, add its slices now.

A stainless steel or enamel pot works best, as it does not react with the acids from the juice and fruits. Avoid aluminum pots.

Place a pot on the stove over medium heat. Slowly heat the mixture until it becomes very hot and the first small bubbles start to appear at the edges of the pot. This is a very important moment – do not let the drink boil! Boiling would destroy the delicate aromas of the spices and the vitamins.

Watch the drink closely. As soon as you see it start to gently 'quiver' and steam, immediately reduce the burner to the lowest setting. This is a crucial moment for preserving the full flavor.

When the drink is hot, reduce the heat to the absolute minimum, just enough to maintain the temperature without boiling. Cover the pot with a lid, leaving a small gap, and let the mulled wine 'infuse' for about 15-20 minutes. During this time, the spices will release their essential oils, and the flavors will blend perfectly.

The longer you heat the mulled wine over low heat, the more intense and spicy its flavor will become. Occasionally, you can gently stir the mixture with a wooden spoon.

Remove the pot from the heat. Now is the time to sweeten the mulled wine if desired. If you are using honey, add it now when the drink is no longer boiling. Start with one tablespoon, mix thoroughly until the honey dissolves, and then taste. Add more if you think it's necessary, until you achieve the desired sweetness.

Ingredients: wildflower honey
Use a clean teaspoon for tasting to avoid transferring bacteria to the pot. Adding honey to hot, but not boiling, liquid helps preserve its health benefits.

Prepare mugs or glasses made of thick glass. Using a ladle, carefully pour the hot drink. You can strain it through a small sieve if you don't want any spices in the mug, but mulled wine looks much better served with a slice of orange and a star anise. Garnish each serving with a fresh sprig of rosemary and optionally a fresh slice of orange on the rim of the mug. Serve immediately while hot.

The drink looks best in transparent mugs for mulled wine or latte glasses. Be careful when pouring, as the drink is very hot.

Serve the mulled wine in thick-walled glasses or ceramic mugs that will keep the heat for a long time. For the adult version, you can add 30-40 ml of dark rum, brandy, or orange liqueur to each serving after pouring it into the mug. You can also stud cloves into a slice of orange to make them easier to remove later.

If you have leftover mulled wine, you can store it in the fridge in a sealed container (e.g., a jar) for up to 3 days. Before serving, heat it slowly in a pot over low heat, without bringing it to a boil. It is not recommended to heat it in the microwave, as this can unevenly warm the drink and ruin its aroma.
