Preparation steps
Choose a medium-sized pot, preferably with a capacity of about 3 liters. Pour the entire liter of apple juice into it. Add all the prepared spices and flavors to the juice: two cinnamon sticks, five cloves, two star anise, the previously prepared strips of orange peel, and the squeezed juice. Finally, add two sprigs of fresh rosemary. If you opted for the version with ginger, also add its slices.
Place a pot on the stove over medium heat. Slowly heat the mixture until it is very hot, but do not bring it to a boil. Watch the surface of the liquid – as soon as you notice small bubbles and rising steam, immediately reduce the heat to the minimum. Cover the pot with a lid and let the drink gently 'infuse' for about 15-20 minutes. This process will allow all the flavors from the spices to slowly release into the juice.
After 15-20 minutes, turn off the heat. Using a slotted spoon or tongs, carefully remove the larger ingredients from the pot: cinnamon sticks, star anise, rosemary sprigs, and orange peel. To make the drink perfectly clear, strain it through a fine mesh sieve into a pitcher or another clean pot. This will help you get rid of the cloves and smaller particles. Taste the drink. If it's not sweet enough for you, now is the perfect time to add honey (or maple syrup). Stir gently until the sweetener is completely dissolved.
Pour the hot, aromatic mulled wine into the prepared mugs or heatproof glasses. Garnish each serving with a fresh slice of orange that you set aside earlier. For an enhanced visual effect and aroma, you can add a small, fresh sprig of rosemary to each glass. Serve immediately while the drink is hot and exuding its wonderful fragrance.
