Preparation steps
Add the chopped bacon and fry for 5 minutes. Add the ground meat and fry, breaking up the clumps, until browned.
Pour in the wine and cook until it evaporates. Add the tomatoes and tomato paste, garlic. Season, reduce the heat.
Simmer the ragù on low heat for 2-3 hours, stirring occasionally. The sauce should be thick.
Prepare the béchamel: melt the butter, add the flour and sauté for 2 minutes. Gradually pour in the warm milk, stirring.
Cook the béchamel over low heat for 10 minutes until it thickens. Season with nutmeg, salt, and pepper.
Preheat the oven to 180°C. In a baking dish, layer: ragù, pasta, béchamel, parmesan.
Layer 4-5 layers, finishing with béchamel and a generous portion of Parmesan. Bake for 45 minutes until golden.
