Wash the peaches under running water and dry them with a paper towel. Cut each peach in half lengthwise, twist the halves, and remove the pit. If the skin is very fibrous, you can gently peel the fruit with a knife. Cut each half into 2-3 larger pieces so that they can be easily arranged on the grill or grill pan.

Use a sharp, large knife and a cutting board; hold the fruit steady with one hand and cut with the other. If the peaches are very soft, work gently to avoid crushing the flesh.

Grilling

Preheat the grill or grill pan to medium-high heat (about 200°C on a charcoal/gas grill, or a well-heated dry grill pan). Brush the peach halves with a thin layer of melted butter or a little oil (use a kitchen brush). Place the halves cut side down and grill for 3-4 minutes, until well-defined grill marks appear and the flesh softens slightly; turn and grill the flesh side for 1-2 minutes to lightly caramelize the sugars.

Use tongs to turn them, do not pierce the fruit with a fork (juice will leak out). The pan/oven should be well heated — if the peaches stick, add a little fat.

Syrup

In a small saucepan, pour in 100 ml of water (from the bottle), add sugar and a few sage leaves (about 6-8 leaves) and, optionally, honey instead of part of the sugar. Heat over medium heat, stirring with a wooden spoon until the sugar completely dissolves (about 3-4 minutes). When the syrup starts to bubble slightly, reduce the heat and cook for 2 minutes to allow the sage aroma to infuse into the liquid. Remove from heat and let it cool for 10 minutes — the syrup should smell herbal and slightly caramelized.

Use a small saucepan with a thick bottom to prevent the syrup from burning. If you are using honey, add it after removing from heat and mix well.

Preparing the lemon

Wash the lemons and finely grate the zest from one lemon (only the yellow part). Cut the lemons in half and squeeze the juice into a measuring cup. You should get about 2 medium lemons (about 200 g of fruit) — if the juice is weaker, add one more half. Remove the seeds from the juice.

Use a manual citrus juicer to extract as much juice as possible. Grate the zest beforehand, before cutting the lemon, for convenience.

Assembly of the lemonade

In a large pitcher, place the cooled halves/pieces of grilled peach (you can gently mash some with a spoon for a more intense flavor), pour in the prepared syrup (strained to remove the sage leaves), add freshly squeezed lemon juice and grated zest. Pour in chilled sparkling water to a volume of about 1 liter (depending on your preferred sweetness) and gently stir with a large spoon for 10-15 seconds — stir in a way that preserves the bubbles.

Use a pitcher with a capacity of at least 1.5 l. Stir slowly from the bottom up to avoid losing carbonation.

Serving

Place ice cubes in the glasses (optional), add a slice of grilled peach on the rim or in the center, pour in the lemonade, and garnish with a sprig of fresh sage. Enjoy immediately — the drink tastes best when it's very cold and fresh.

The best vessels are highball glasses. If you want the lemonade to be more intense, leave the fruit in the drink for 10-20 minutes, then serve.

If you plan to prepare the lemonade in advance, keep the syrup and fruits separate in the fridge, and combine with sparkling water before serving. Store any leftovers in a closed pitcher in the fridge for up to 24 hours — after that, the flavor and bubbles diminish.
