Heat over medium heat for 2–3 minutes, stirring with a wooden spoon, until the rhubarb releases its juice and softens slightly, but does not completely break down. Remove from heat and let it sit for 1–2 minutes to cool slightly — it should be warm or lukewarm, NOT hot.
Mixing
Into the blender jar or a tall container, add buttermilk, chopped strawberries, and cooled rhubarb (along with the juice). If you want a sweeter smoothie, add the remaining honey (about 20 g) or sprinkle in 10–20 g of sugar. Blend on medium power for 20–30 seconds until you achieve a smooth, creamy consistency, or shorter if you prefer fruit chunks. Taste and adjust with more honey or a teaspoon of lemon juice if you want a more pronounced acidity.
Serving
Pour the cocktail into two tall glasses. Add a few ice cubes if you want to chill the drink. Garnish the top with mint leaves or half a strawberry on the rim of the glass. Serve immediately — buttermilk tastes best fresh.
