Preparing the fruits

Wash the strawberries under cold running water, and dry them on a paper towel. Remove the stems (use kitchen scissors or a small knife) and cut the strawberries into quarters or smaller pieces if they are very large. Wash the rhubarb, trim the ends and leaves (discard the leaves). If the stalks are thick or fibrous, peel the outer layer thinly with a knife. Cut the rhubarb into slices or cubes about 5–8 mm thick.

Use a cutting board and a sharp knife. Small strawberries only need to be cut in half. Do not leave rhubarb leaves near the food — they are toxic.

Quick preparation of rhubarb

Place the chopped rhubarb in a small pot, add 20 ml of water (2 tablespoons) and 10 g of honey (if using; alternatively, 10 g of sugar). Heat over medium heat for 2–3 minutes, stirring with a wooden spoon, until the rhubarb releases its juice and softens slightly, but does not completely break down. Remove from heat and let it sit for 1–2 minutes to cool slightly — it should be warm or lukewarm, NOT hot.

Use a small pot with a diameter of 14–16 cm and a wooden spoon. Do not cook for longer than 3–4 minutes, as the rhubarb will become mushy. If you're in a hurry, instead of cooking, you can blend the raw rhubarb with 10–20 ml of water (this will add a slightly chunky texture).

Into the blender jar or a tall container, add buttermilk, chopped strawberries, and cooled rhubarb (along with the juice). If you want a sweeter smoothie, add the remaining honey (about 20 g) or sprinkle in 10–20 g of sugar. Blend on medium power for 20–30 seconds until you achieve a smooth, creamy consistency, or shorter if you prefer fruit chunks. Taste and adjust with more honey or a teaspoon of lemon juice if you want a more pronounced acidity.

Use a hand blender or a countertop blender. If you don't have a blender, you can mix the ingredients vigorously with a whisk, but the drink will have pieces of fruit. Make sure the rhubarb is cooled — hot rhubarb will cause the buttermilk to curdle.

Pour the cocktail into two tall glasses. Add a few ice cubes if you want to chill the drink. Garnish the top with mint leaves or half a strawberry on the rim of the glass. Serve immediately — buttermilk tastes best fresh.
